WINE SPECTATOR AWARDED TENUTA PEDERZANA

Another recognition for the famous Emilia winery.

Over the past few days, the Emilian winery Tenuta Pederzana received an excellent score for one of its wines: Wine Spectator awarded 91 points to Grasparossa della Tradizione 2020.

The modern reinterpretation of a Castelvetro classic. Immediately recognisable is the typical marasca cherry of Grasparossa and its characteristic vinosity. Thanks to its full-bodiedness, the perlage (small in size due to the long frothing and prolonged cold soaking) blends with the wine giving a sumptuous sensation of creaminess to the palate. The initial soft and round taste continues into a dry and pleasantly tannic finish, making it an ideal accompaniment to all fatty foods.

In normal years the harvest takes place in the first ten days ofoctober with grapes at the right phenolic maturity. There is anextractive maceration of 5 days followed by a first fermentation ofat least 7 months in cement and then by a second one lasting 15days. Finally, there is a long period (3-4 months) of cold soaking tonaturally clarify the wine and obtain a fine and persistent perlagethat is perfectly integrated into the wine.
